As a busy, ambitious professional myself, I understand how hard it is to eat healthy AND actually enjoy it while not spending forever in the kitchen. Last night my husband said how much he was missing pizza while really watching his carbs, yet I didn’t want to spend the hour to make the cauliflower pizza crust pizza that I, a woman with Celiac Disease, have made many times.

So I tried a new, faster recipe and didn’t like the results. Determined to quickly make a great low carb, gluten-free pizza, I made two more pizzas with my instinct as a guide. So, for those of you who want to have a healthy, happy life…even beyond your professional powers…here is the ticket to indulge that pizza craving. You’re welcome for the assistance in keeping to your 2013 wellness goals:

Amber’s Doesn’t Taste Like Cauliflower Pizza

Pizza Crust:
1 cup cooked, riced fresh cauliflower (about 1/2 a head)
1 cup shredded mozzarella cheese*
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic powder
Olive oil (optional)

Pizza:

Pizza sauce
Mozzarella cheese, shredded
Toppings of your choice

Directions:

-Preheat oven to 450 degrees F.
-”Rice” fresh cauliflower using the food processor’s shredder blade. You could grate it, but that would suck.
-Microwave riced cauliflower with1/4 cup water for 8 minutes, stirring after 4 minutes, then cooking for 4 more minutes.
-Squeeze out any excess water with a dish towel, then place in a medium bowl.
-Mix cauliflower, mozzarella cheese and egg together.
-Add oregano, garlic, and garlic powder-mix again.
-Lay parchment paper on a baking sheet.
-Press mixture into a 9-inch circle.
-Brush the crust with olive oil. (optional)
-Bake at 450 degrees F for 15 minutes, until the crust is browned and cooked through the middle.
-Use a BIG spatula to flip, then cook 5 minutes longer *only if the bottom isn’t firm. (If you cook it on the top rack, you should be good without doing this.)
-Remove the crust from the oven, then add a LIGHT layer of sauce and your toppings. (I highly recommend fresh basil as one topping.)
-Set the oven to broil.
-Place under the broiler for 3 minutes, until it is bubbly.
-Let pizza to cool slightly for a few minutes, slice and serve with crushed red pepper and shredded Parmesan cheese as additional topping options.
-Rock your family’s faces off.
